Classic American elegance at Maryland’s Milton Inn [classic article]

The Milton Inn has been a favorite restaurant of “Maryland’s ladies and gentlemen” for over 65 years, in a fieldstone house dating over 275 years. The Milton Inn is the only restaurant in Baltimore County to receive the prestigious DiRoNA award- North America’s highest restaurant award based on cuisine, service and atmosphere. 2011 Chef of the Year, Executive Chef/Partner Brian Boston’s kitchen produces cuisine that has been described by the Zagat Survey as “top ranked Traditional American Cuisine” every year since 2002. The Inn’s wine list is a perennial winner of the Wine Spectator “Award of Excellence.”

The Milton Inn’s cuisine is classic, not trendy . . . no Trilby wearing hipsters will be faux touting the wonders of kimchi sausage fusions.

You might want to consider making reservations. They have lots of different promotions, including a chef’s tasting menu/early bird type of special that’s wildly popular. Dress seems to be on the dressy-preppy side.

Appetizers for two give you a great cross-section of their most popular delicacies in a beautiful afternoon tea-style presentation. It could easily work as a light dinner. The trays include Clams Casino: Six fresh top necks prepared in the traditional manner with garlic butter, red peppers and bacon; Chicken Liver Mousse: Garnished with onion rings, chopped eggs and toast points; Oysters Rockefeller: Six oysters enrobed with spinach, shallot and Pernod cream finished with Hollandaise; Beef Tenderloin Tartare: With anchovy aioli, sriracha, capers, shallot, cornichons, quail egg yolk, smoked sea salt and toasted baguette; Guinness cheddar. The items are sauced in a way that befits fine dining/special occasions — lightly and elegantly. The umami flavors in this grouping whet the appetite without being heavy. These are traditional appetizers freshened for today’s sophisticated palates, but still familiar and welcomed.

The restaurant always has daily menu specials that coax the best flavor out of seasonal and local meat, fish.

Sometimes, the dining room fills up, but there are a few tables at the historic and charming tavern. I saw some business people meeting at the sofa and coffee table. That would be a very impressive way to do business, for sure! The tavern has a tv and you can order off the regular or lounge menu.
