Cornbread worthy of a First Lady! Cathy Justice’s winning West Virginia recipe

Cathy Justice is the new First Lady of West Virginia, wife of Governor Jim Justice. Governor Justice recently made news when he declared himself a newly-minted Republican when at a rally with President Donald Trump.

Mrs. Justice’s cornbread is served at the Prime 44 West steakhouse at the Greenbrier Resort.

This is a family recipe, as well as Cathy’s blue ribbon award winning entry
at the West Virginia State Fair.

1 cup yellow cornmeal
1 cup all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking soda
1/16 teaspoon salt
1 cup buttermilk
1 egg, slightly beaten
1/4 cup canola oil

Preheat oven to 425°.
Oil an 8×8 pan.
Mix all dry ingredients. Add liquids. Stir just to mix.
Bake 30 minutes until golden brown.

“Please use your judgment about sugar & oil. It’s better sweet than not!
I’ve made this for a long time and don’t do exact measurements! This should be close.”
