Gluten-free goodies with Mightilicious!

Thanks to the nice folks at Mightilicious, I was looking forward to trying some of their new gluten-free products. Little did I know that in the meantime, I’d have a emergency tummy procedure where it’s a crap-shoot (if that’s not too horrible a pun) as to what I could eat. So, it was the perfect time to check them out!

Vegan Chocolate Brownie Mix will definitely please all eaters. I didn’t know if it would have the flavor or richness of a good brownie. But it’s made of 2 kinds of chocolate — Dutch processed, which gets the alkali out, for that “creamier” taste — and extra dark chocolate.

It couldn’t be easier: you mix few things in a bowl and pour it into a parchment lined pan. They do suggesting swapping out hot water for hot coffee. I used some dark roast and the brownies certainly turned out chocolately.

You also add some vegan yogurt or an egg. For other options, they also suggest applesauce or flax eggs, but they’re supposed to be not as good for “structure”.

They also suggest adding nuts or chocolate chips. What I had were some very gourmet mixed raisins. Then, I thought of “rum raisin,” which was one of my dad’s favorite flavors. Then, I also added some dark rum!

They suggested baking them for 25 minutes for chewy brownies, 30 for cakier. My little oven probably needs to be re-calibrated, so I baked 35 minutes for chewy. You just have to check! They turned out great.

Mightylicious has a finely ground gluten-free — rice — All Purpose Flour that escapes the wrong texture and off flavors of other gluten-free flours. The flour has 8g protein It’s light like cake flour. So, I tried using in for a very flour-intense dish: gravy. I made a pepper cream gravy with it, it was tasty. It maybe took a bit more effort to make it smooth than wheat flour, but it was all good.
