Sometimes, if you’re living life right, you have other plans during the traditional earlier hours for dinner. Whether you’re at a concert or just having a good time with friends, all of a sudden you find yourself famished. But to extend a special evening, you don’t want to just find yourself at the nearest diner. When I was much younger, my dad taught me the value of “coffee and”. Think of the “Viennese table” after a late night wedding, but perhaps savory.

On the eastern edge of continental North America, Raymonds in St. John’s, Newfoundland is a perfectly elegant way to end your memorable night. I was happy to be hosted to experience it!

There’s a cozy dedicated bar room with both modern, chic and rustic touches for the finest cocktails. Fine Kentucky bourbons way up north? Yes! Mixologist touches? You bet. Ice made from local icebergs, over 30,000 years old pure water? Yes, indeed!

The dining room is larger, more open and more brightly lit with a chic version of chandeliers. To go with one of their specially selected wines, why not share a charcuterie plate and a round of oysters on the half-shell? They cure and prepare their meats in-house, presented with hard boiled quail eggs. Spread some of your pâté and house-whipped butter on herb water crackers.

Freshly grated horseradish is piled high to adorn your local oysters that have deep, deep cups, lacy edged shells and a meaty flavor.
