The art of tasty lunch: Amsterdam’s Van Rijn Kitchen and Bar

Amsterdam has many stars from its Golden Age, including Rembrandt Van Rijn. On the city’s square honoring the master artist is a new restaurant, Van Rijn. It’s a casual, yet hip place putting its own spin on classic and Dutch favorites. Lest you forget its inspiration, many Rembrandt prints hang on its double-high walls. I’m glad that I was hosted to be able to experience it!

I started the meal with freshly squeezed orange juice. This time of year, a few fresh vitamins are a good idea!

Also good this time of year: soup for lunch. Van Rijn’s tomato soup is topped with pesto aioli and the rich orange egg yolk found in Amsterdam. The soup is seasoned with lots of herbs and a nice hit of salt. Minced garden veggies are at the bottom of the bowl, contributing to layers of flavor.

For my main course, I had a sandwich of sliced smoked beef, truffled mayo, Grana Padano cheese on a pine nut bun. It’s those little different touches — smoked beef instead of roast beef, unusual pine nut bun — that take Van Rijn far out of the ordinary.
